- 🍗 2 pieces chicken thighs (about 500g)
- 🍯 1 tbsp honey
- 1/2 cup sake
Seasoning
- A pinch of five-spice powder
- 4 tbsp soy sauce
- 🧂 4 tbsp sugar
Vegetables
- 1/2 stalk shredded white leek
- 2 bunches chopped mizuna

Remove excess fat from chicken thighs. Mix with marinade ingredients (five-spice powder, soy sauce, sugar) in a tray, massage lightly, and let sit for 30 minutes, flipping once halfway.
Place marinated chicken and sake in a frying pan. Cover with a drop lid and heat over medium heat. Once boiling, turn the chicken 2-3 times and simmer for about 12 minutes until the sauce reduces slightly.
Remove the drop lid, add honey, and simmer for about 2 minutes until glossy. Let cool slightly and slice into 5-6mm thick pieces.
Soak shredded white leek and chopped mizuna in water, then drain thoroughly. Arrange chicken and vegetables alternately on a plate.
