Main
- 10cm lotus root
- Potato starch as needed
- 1 tsp salad oil
- White sesame seeds as needed
- Chopped green onion as needed
Meat Filling
- 300g ground pork
- 🧅 1/2 onion, minced
- 2 tbsp sake
- 🧂 1/3 tsp salt
- A pinch of black pepper
- 1 tsp grated ginger
- 1 tbsp potato starch
Teriyaki Sauce
- 2 tbsp sake
- 2 tbsp mirin
- 2 tbsp soy sauce
- 💧 4 tbsp water
Thickener
- 1 tsp potato starch
- 💧 1 tsp water

Slice the lotus root into 5mm thick rounds, soak in water for 5 minutes, and pat dry. Mince the onion.
In a bowl, combine all the meat filling ingredients and knead well until sticky.
Heat salad oil in a frying pan and spread half of the lotus root slices evenly. Sprinkle with potato starch, spread the meat filling on top, sprinkle again with potato starch, and cover with the remaining lotus root slices. Press lightly to adhere.
Cook over medium heat for 5 minutes until browned, flip, cover with a lid, and cook for another 5 minutes until the other side is browned. Transfer to a serving plate.
Wipe the pan lightly, add all the teriyaki sauce ingredients, and bring to a boil over medium heat for 1-2 minutes.
Add the thickener (potato starch mixed with water) to the sauce and stir until it thickens. Pour the sauce over the cooked pancake.
Garnish with white sesame seeds and chopped green onion before serving.
