- 250g shucked oysters
Spices
- 🧄 1 clove garlic
- 1/2 tsp sansho pepper
- 1/2 tsp sliced chili
- 🧂 1/4 tsp salt

- 100cc sesame oil
- 100cc salad oil

Wash the oysters in salted water (not listed) and pat dry thoroughly with paper towels.
Cut the garlic clove in half lengthwise, remove the core, and crush it with the flat side of a knife.
Place the oysters, garlic, chili, and salt into a pot. Add sesame oil and salad oil, then heat over low heat for 15–20 minutes until cooked through.
Transfer the cooked mixture into a heatproof jar, add sansho pepper, and let it cool. Once cooled, seal the jar and refrigerate overnight.
