- 🍗 1 chicken breast (250g)
- 1/2 red paprika (75g)
- 1/2 yellow paprika (75g)
- 150g lotus root
- 1/2 green leaf (100g)
- 🧂 Pinch of salt and pepper
- 1 1/2 tbsp olive oil
Dressing
- 🥛 3 tbsp unsweetened yogurt
- 2 tbsp mayonnaise
- 2 tsp mustard seeds
- 🧄 1/4 tsp grated garlic

Cut red and yellow paprika into bite-sized pieces. Slice lotus root into 5mm rounds and soak in water, then drain. Tear green leaf into manageable pieces.
Slice chicken breast into thirds, then cut diagonally into bite-sized pieces. Season with salt and pepper.
Heat olive oil in a frying pan over medium heat. Add chicken and cook both sides. Add paprika and lotus root, stir to coat with oil, then cover and steam on low heat for 3-4 minutes.
Mix all dressing ingredients in a bowl.
Arrange green leaf on a plate, top with cooked chicken and vegetables, and drizzle with dressing.
