Meat
- 600g pork spare ribs
Vegetables
- 4 slices ginger
- 5cm white negi
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tsp salad oil
Sauce
- 3 tbsp sake
- 3 tbsp mirin
- 3 tbsp soy sauce
- 💧 150cc water

Pat the spare ribs dry with paper towels and season with salt and pepper.
Heat salad oil in a pressure cooker over medium heat. Add the spare ribs and sear until browned on both sides.
Add the ginger and all sauce ingredients (sake, mirin, soy sauce, water). Mix well, cover, and cook under pressure for 15 minutes on low heat.
After cooking, let the pressure release naturally. Remove the lid and heat over medium heat to reduce the sauce, coating the ribs.
Plate the ribs and garnish with white negi.
