Main Ingredients
- 🎃 250g pumpkin, seeds and pulp removed
- 🧀 30g processed cheese
- 🌱 50g mixed beans
- 🧂 A pinch of salt and pepper
Yogurt Dressing
- 🥛 1 tbsp unsweetened yogurt
- 🍶 1 tbsp mayonnaise
- 🧀 1/2 tbsp grated cheese

Peel half of the pumpkin skin, cut into bite-sized pieces, and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 4 minutes. Mash coarsely while hot and let it cool.
Cut the processed cheese into 7mm cubes.
In a large bowl, mix the yogurt dressing ingredients (yogurt, mayonnaise, grated cheese). Add the mashed pumpkin, processed cheese, and mixed beans. Mix well and season with salt and pepper to taste.
