- 🐟 200g salmon fillet
Vegetables
- 🍄 60g king oyster mushroom
- 10g kaiware sprouts
Seasoning
- 🧂 Pinch of salt and pepper
- 1/2 tbsp all-purpose flour
- 🧈 10g salted butter
- 1 tbsp mirin
- 1 tbsp ponzu sauce

Season the salmon fillets with salt and pepper, then coat them lightly with flour.
Slice the king oyster mushroom into six vertical pieces.
Heat butter in a pan over medium heat. Place the salmon and mushrooms in the pan and cook until browned. Flip the mushrooms to cook both sides and remove them to a plate. Flip the salmon, cover the pan, and steam cook on low heat for about 3 minutes. Transfer to a plate.
Wipe the pan lightly with a paper towel. Add the ingredients for the butter ponzu sauce and heat over medium heat until it boils and thickens.
Pour the butter ponzu sauce over the salmon and mushrooms. Garnish with kaiware sprouts.
