Fish
- 🐟 200g salmon fillet
Vegetables
- 🍄 200g enoki mushrooms
- 🧅 2 green onions
- 1 piece grated ginger
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 tbsp soy sauce
- 1/4 tsp dashi powder
- 💧 200ml water
Thickener
- 1 tbsp cornstarch
- 💧 1 tbsp water

Season the salmon fillets with salt and pepper.
Cut the enoki mushrooms into thirds, slice green onions diagonally into 2cm pieces, and grate the ginger.
Heat salad oil in a pan over medium-low heat and cook the salmon until both sides are golden brown. Remove and plate.
In a pot, combine ginger and sauce ingredients (sake, mirin, soy sauce, dashi powder, water). Bring to a boil, then add enoki mushrooms and simmer for 3 minutes.
Add the cornstarch slurry to the pot and stir until thickened. Mix in green onions briefly and pour the sauce over the salmon.
