Fish
- 🐟 2 fillets fresh salmon
Vegetables
- 🥔 1 potato (150g), sliced into 5mm rounds
Seasoning
- 🧂 Pinch of salt and pepper
Oil
- 1 tbsp olive oil
Sauce
- 1 tbsp whole grain mustard
- 🍯 2 tsp honey
- 2 tsp soy sauce
- 💧 2 tsp water

Pat the salmon dry and season with salt and pepper.
Mix the honey mustard sauce ingredients (mustard, honey, soy sauce, and water) in a bowl.
Slice the potato into 5mm rounds and soak in water to remove excess starch, then pat dry.
Heat olive oil in a pan over medium heat, add the potato slices, and cook for about 3 minutes on each side until golden brown. Push them to the side of the pan.
Place the salmon skin-side down in the pan, cook until browned, then flip and cover with a lid. Reduce heat to low and steam for 1-2 minutes until cooked through.
Remove the potatoes from the pan, add the honey mustard sauce, and coat the salmon evenly. Plate the potatoes and place the salmon on top.
