- 500g beef tongue (block)
- 1 tbsp herb salt
Salt Crust
- 🥚 3 egg whites
- 🧂 1kg coarse salt
- 3 tbsp all-purpose flour

Bring the beef tongue to room temperature.
Rub the beef tongue with herb salt evenly.
Mix egg whites in a bowl until slightly frothy. Add coarse salt and flour, and combine well.
Spread 1/3 of the salt mixture in a heatproof container, place the beef tongue on top, and cover it completely with the remaining salt mixture.
Bake in a preheated oven at 200°C for about 1 hour. Let it rest for 20 minutes to cool slightly.
Break the salt crust using a rolling pin or mallet.
