Dry Ingredients
- 3 ½ cups all-purpose flour
- 🍚 1 ⅓ cups white sugar
- 2 teaspoons baking powder
Wet Ingredients
- 💧 1 ½ cups water
- 🍌 2 medium very ripe bananas, mashed
- 1 tablespoon vanilla extract
For Frying
- 1 ½ cups vegetable oil, or as needed

Whisk flour, sugar, and baking powder together in a bowl until thoroughly mixed.
Stir in water, mashed bananas, and vanilla until combined. The dough should be smooth and sticky.
Heat 3 inches of oil in a deep fryer to 350°F (175°C).
Using two spoons, scoop and push 1/4 cup of batter into the hot fryer oil. Work in batches of four to five.
Fry the panikeke until they float and turn golden brown, about 3 minutes per side.
Remove from oil and drain on paper towels.
