Fish
- 🐟 320g sardine fillets
Vegetables
- 60g grated daikon
Condiments
- 3 chopped umeboshi
- Ponzu soy sauce to taste
Cooking Oil
- 1/2 tbsp salad oil
Seasoning
- 🧂 1/4 tsp salt
- 1 tsp grated ginger
- 2 tbsp potato starch

Grate the daikon and remove excess water. Chop the umeboshi finely after removing the pits.
Remove the skin from the sardines and chop them finely until they become sticky.
Mix the sardines, chopped umeboshi, and seasoning ingredients in a bowl. Divide into two portions and shape into oval patties.
Heat salad oil in a frying pan over medium heat. Cook the patties until browned on one side, flip, cover, and cook for 3 minutes until fully cooked.
Serve the patties on a plate, top with grated daikon, and drizzle with ponzu soy sauce.
