- 🐟 2 fillets (160g) of sawara
Oil
- 1 tsp salad oil
Miso Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tsp soy sauce
- 1 tbsp miso

Pat the sawara fillets dry with a paper towel.
Mix the miso sauce ingredients in a plastic bag and add the sawara fillets. Gently massage the fillets, seal the bag, and refrigerate for 30–40 minutes.
Heat salad oil in a frying pan over medium-low heat. Lightly remove excess miso sauce from the fillets and place them skin-side down. Cook for 3–4 minutes until golden brown.
Flip the fillets, cover the pan, and cook on low heat for another 3–4 minutes until fully cooked.
Add the remaining miso sauce to the pan and simmer until thickened.
