- 🐟 2 fillets Spanish mackerel
Seasoning
- 1 tbsp sake
- 1 piece ginger
Sauce Ingredients
- 3 tbsp sake
- 2 tbsp mirin
- 🧂 1 tsp sugar
- 1 1/2 tbsp soy sauce
- 💧 100 ml water

Slice the ginger into thin strips, reserving 1/3 for garnish.
Place the Spanish mackerel fillets in a tray, sprinkle with 1 tbsp sake, and let sit for 10 minutes. Pat dry with kitchen paper.
Make shallow cuts on the skin side of the mackerel fillets.
In a pot, combine 2/3 of the ginger, sake, mirin, sugar, soy sauce, and water. Heat until boiling, then add the mackerel and cover with a drop lid. Simmer on low heat for 15 minutes. Remove the fish.
Reduce the sauce until slightly thickened. Plate the mackerel, pour the sauce over, and garnish with the reserved ginger.
