Main Ingredients
- 🍚 2 bowls (300g) cooked white rice
- 🐚 150g clams (cleaned)
- 1/3 bunch mizuna
- 🍄 2 shiitake mushrooms
- 🧅 1/4 stalk green onion
- 1 piece minced ginger
- 1/2 tbsp sesame oil
- 💧 500ml water
- 🌰 A pinch of white sesame seeds
Seasoning
- 1 tbsp sake
- 🧂 A pinch of salt and pepper
- 1 tbsp miso
- 1 tbsp gochujang

Cut mizuna into bite-sized pieces. Slice shiitake mushrooms thinly, separating stems and caps. Slice green onion diagonally and mince ginger.
Rub clams together in a bowl of water to clean their shells, then drain.
Heat sesame oil in a pot over medium heat. Add green onion and ginger, sauté until fragrant. Add clams and shiitake mushrooms, stir briefly, then add water. Simmer until clam shells open, skimming off any foam.
Add seasoning ingredients (sake, salt, pepper, miso, gochujang) and mizuna. Stir lightly and simmer on low heat for 2 minutes.
Serve rice in bowls, pour soup over, and garnish with sesame seeds.
