- 🍗 1 piece (300g) chicken thigh
- 🍗 8 pieces (480g) chicken drumsticks
- 🧂 Pinch of salt and pepper
Marinade
- 🥚 1 egg
- 🥛 100cc milk
- 🧄 1 tsp grated garlic
- 1 tsp chili powder
- 🧂 1/2 tsp salt
Coating
- 150g all-purpose flour
- 100g potato starch
- 1 tbsp chili powder
- 1 tbsp allspice
- 1/2 tbsp paprika powder
- 🧂 1/2 tsp salt
For Frying
- Sufficient vegetable oil for frying
Topping
- Cayenne pepper to taste
- Chili powder to taste

Cut slits along the bone of the drumsticks and season with salt and pepper. Trim excess fat and sinew from the chicken thighs, cut into quarters, and season with salt and pepper.
In a bowl, combine the chicken pieces with the marinade ingredients and massage well. Refrigerate for 15 minutes.
In another bowl, mix the coating ingredients. Coat each piece of chicken thoroughly with the mixture.
Heat vegetable oil in a pot to 170°C. Fry the drumsticks for about 7 minutes, turning occasionally, until cooked through and golden. Repeat with the chicken thighs for about 5 minutes.
Increase the oil temperature to 180°C. Fry the drumsticks again for 2 minutes, turning occasionally, then repeat with the chicken thighs.
Plate the chicken and sprinkle with cayenne pepper and chili powder.
