- 200g cod fillets
Vegetables
- 200g spinach
- 🧅 100g onion, sliced
- 100g shimeji mushrooms
Dairy
- 60g pizza cheese
- 🥛 300ml milk
- 15g salted butter
Seasoning
- 🧂 1/2 tsp salt
- Pinch of pepper

- 1 tbsp sake
- 1/2 tbsp olive oil
- 2 tbsp all-purpose flour

Cut spinach into 3cm lengths, slice onion thinly, and separate shimeji mushrooms from their base.
Cut cod fillets into quarters, place in a microwave-safe dish, sprinkle with sake, cover with plastic wrap, and microwave at 600W for 2 minutes.
Heat olive oil in a pan, sauté shimeji mushrooms and onion over medium heat until softened, then add spinach and cook until wilted.
Sprinkle flour into the pan, stir until no longer powdery, then add milk and seasonings. Stir continuously until the mixture thickens. Add cod and mix well.
Divide the mixture into oven-safe containers, top with pizza cheese, and bake in a preheated oven at 200°C for 15–20 minutes until cheese is golden brown.
