Eggs
- 🥚 2 beaten eggs
Vegetables
- 🥬 100g spinach
- 🍄 100g shimeji mushrooms
Oils and Fats
- 1/2 tbsp salad oil
- 🧈 10g salted butter
Seasonings
- 🧂 1 pinch salt
- A dash of pepper
- 1 tsp soy sauce

Prepare the spinach by trimming the roots, washing thoroughly, and cutting into 4cm pieces. Separate the shimeji mushrooms into small clusters.
Heat salad oil in a frying pan over medium heat. Add the beaten eggs and stir until semi-cooked. Remove from the pan.
In the same pan, add butter and heat over medium heat. Stir-fry the shimeji mushrooms for about 2 minutes, then add the spinach and cook until softened.
Return the eggs to the pan and mix well. Season with salt, pepper, and soy sauce, stirring to combine.
