Remove the squid's innards and tentacles from the body. Take out the cartilage from the body. Cut off the eyes and mouth from the tentacles. Trim the tips of the tentacles by about 1cm. Wash the body and tentacles. Slice the body into 1cm strips and divide the tentacles into pairs.
Heat butter in a frying pan over medium heat. Add the squid and stir-fry until the color changes. Add ponzu soy sauce and mix well. Plate the squid and garnish with mayonnaise and chopped green onions.
