- 🍗 200g chicken breast

- 3 tbsp shirasu

- 2 umeboshi (pickled plums)
- 2 tbsp sake
- 🧂 1/2 tsp salt
- 🍯 1 tsp honey
- 1 tbsp olive oil
- Pinch of pepper

Remove the pits from the umeboshi and mash them with a knife.
Place chicken, sake, and salt in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 4 minutes.
Keep the wrap on to let the chicken finish cooking. Once cooled, cut into bite-sized pieces and reserve the steaming liquid. Plate the chicken and drizzle with the steaming liquid.
In a bowl, mix honey, olive oil, and pepper. Add mashed umeboshi and half of the shirasu, mixing well to create the ume shirasu sauce.
Pour the ume shirasu sauce over the chicken, sprinkle the remaining shirasu on top, and serve.
