- 200g Malabar spinach
- 🧅 1/2 onion, sliced

- 5 slices bacon
Eggs
- 🥚 2 eggs
Seasoning
- 🧄 1 clove garlic, sliced
- 1 tbsp olive oil
- 2 tbsp olive oil for cooking
- 1/2 tsp consomme powder
- 🧂 Pinch of salt and pepper

Separate Malabar spinach leaves and stems. Cut stems into 3cm diagonal pieces.
Slice onion and garlic thinly. Cut bacon into 2cm wide strips.
Beat eggs in a bowl with a pinch of salt and pepper. Heat 1 tbsp olive oil in a pan over medium heat, add eggs, stir gently, and remove when semi-cooked.
Heat 2 tbsp olive oil in the pan over medium heat. Add garlic and sauté until fragrant. Add Malabar spinach stems, onion, and bacon, and stir-fry for 1 minute until onion turns translucent.
Add Malabar spinach leaves, consomme powder, and a pinch of salt and pepper. Stir-fry briefly, then add the semi-cooked eggs and mix gently. Serve immediately.
