    • potato starch as needed
    • shredded shiso leaves as needed

    • 100g ground chicken

    • salt and pepper to taste
    • 1/2 tbsp potato starch
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tbsp sugar
    • 1 tbsp soy sauce

Clean the shiitake mushrooms and remove the stems. Mince the soft parts of the stems. Chop the green onions.
