Vegetables
- 🍠 250g sweet potato, peeled and diced
- 🧅 1/2 onion, roughly chopped
- 🌱 60g frozen edamame, shelled
Canned Goods
- 🐟 35g canned tuna in water
Condiments
- 🧴 3 tbsp mayonnaise
- 🌾 1 tsp grain mustard
- 🧂 Pinch of salt and pepper

Peel and dice the sweet potato into bite-sized pieces. Soak in water for 5 minutes, then drain. Roughly chop the onion and shell the edamame.
Place sweet potato, onion, and 1 tbsp water in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 5 minutes. Drain any excess water.
Mash the cooked sweet potato and onion mixture lightly and let it cool.
Mix the mashed mixture with mayonnaise, mustard, salt, and pepper. Add edamame and canned tuna, then mix thoroughly.
