Fish
- 🐟 4 sardines (480g)
Oil
- 1 tbsp salad oil
Filling
- 🧈 100g firm tofu
- 🧅 1/2 stalk green onion, minced
- 🥚 1 beaten egg
- 1/2 tsp grated ginger
- 2 tbsp potato starch
- 🧂 Pinch of salt
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce

Remove scales, head, and guts from sardines. Clean thoroughly under running water and pat dry.
Debone and fillet the sardines, then chop finely until smooth and sticky.
Mince the green onion finely.
Wrap firm tofu in paper towels and microwave for 1 minute at 600W. Let cool.
Combine sardines, tofu, green onion, egg, ginger, potato starch, and salt in a bowl. Mix thoroughly to form the filling.
Heat salad oil in a frying pan. Shape the filling into small patties using a spoon and cook over medium-low heat until golden brown on both sides.
Add sake, mirin, sugar, and soy sauce to the pan. Simmer and coat the patties evenly with the sauce.
