Preheat the oven to 180°C and line a cake pan with parchment paper.
Peel the bananas. Slice two into 1 cm rounds and finely chop the third.
In a bowl, whisk together silken tofu and milk until creamy. Add eggs and sugar, mixing well. Gradually add pancake mix and stir until combined. Fold in the finely chopped banana.
Pour the batter into the prepared pan. Arrange the banana slices on top and sprinkle granulated sugar evenly over the surface. Bake at 180°C for 50–55 minutes. Let cool before removing from the pan.
