Noodles
- 30g glass noodles
Vegetables
- 10cm nagaimo (Japanese yam)
- 1/2 pack kaiware sprouts
- 🧅 A pinch of chopped green onion
Egg
- 🥚 2 egg yolks
Seasoning
- 2 tbsp tempura flakes
- 2 tbsp concentrated soy sauce (3x)

Place the nagaimo in a plastic bag and lightly crush it with a rolling pin, leaving some texture. Cut the kaiware sprouts in half after removing the roots.
Put the glass noodles in a microwave-safe container, add enough water to cover them, and loosely cover with plastic wrap. Microwave at 600W for 5 minutes. Rinse in water and drain. Cut into bite-sized pieces with scissors.
Arrange the glass noodles, kaiware sprouts, nagaimo, tempura flakes, egg yolks, and green onion in a bowl. Pour the concentrated soy sauce over the top.
