Noodles
- 170g dried soba noodles
Vegetables
- 250g grated nagaimo
Sauce
- 2 tbsp mirin
- 2 1/2 tbsp soy sauce
- 1/3 tsp dashi powder
- 500ml water
Toppings
- 🥚 2 egg yolks
- A pinch of aonori
- 🧅 Chopped green onion, to taste

Grate the nagaimo to make tororo.
Boil water in a pot, cook the soba noodles according to package instructions, rinse with cold water, and drain. Place in serving bowls.
In a separate pot, combine the sauce ingredients (mirin, soy sauce, dashi powder, and water) and heat over medium heat until boiling. Simmer for 1–2 minutes.
Pour the sauce over the soba noodles, top with tororo, egg yolks, aonori, and chopped green onions.
