Broccoli Datemaki
- 🥦 30g broccoli florets
- 1/2 sheet hanpen (50g)
- 🧂 2 tbsp sugar
- 🥚 2 eggs
- 🧂 Pinch of salt
- 💧 1 tbsp water
- Cooking oil as needed
Paprika Datemaki
- 60g red paprika
- 1/2 sheet hanpen (50g)
- 🧂 2 tbsp sugar

Teriyaki Yellowtail
- 3 slices yellowtail (250g)
- 🧂 Pinch of salt
- 1 tbsp sake
- 🧂 1.5 tbsp sugar
- 3 tbsp mirin
- 3 tbsp soy sauce
Red and White Namasu
- 150g daikon
- 🥕 30g carrot
- 3 yuzu
- 🧂 Pinch of salt
- 🧂 1 tbsp sugar
- 1 tbsp vinegar
- 1 tbsp yuzu juice
Two-color Chakin
- 200g boiled soybeans
- 🧂 2/3 tbsp sugar
- 1 tsp matcha
- 🧂 1/3 tbsp sugar
- 3 slices radish
- Ikura as needed

Finely chop broccoli florets and grate red paprika.
Mash hanpen in a bowl and mix with sugar, salt, and water until smooth.
Add eggs one at a time, mixing thoroughly, then add broccoli or paprika.
Heat oil in a tamagoyaki pan, pour the mixture, cover with foil, and cook on low heat for 3–4 minutes.
Roll the cooked datemaki while hot, wrap in foil, and let cool.
Season yellowtail with salt, let sit for 10 minutes, and pat dry.
Microwave yellowtail with sake for 1.5 minutes per side.
Cook yellowtail in teriyaki sauce until thickened.
Slice daikon and carrot, salt lightly, and let sit for 10 minutes.
Mix namasu ingredients and serve in yuzu shells.
Mash soybeans with sugar, divide into two, and mix one part with matcha.
Wrap each portion in plastic wrap, shape, and garnish with radish and ikura.
