- 3 tbsp mayonnaise
- 1 tsp wasabi

Cut bacon into 1cm squares and heat in a toaster for about 5 minutes. Cut avocado in half, remove the seed and skin, and dice into 1cm cubes. Place in a bowl and drizzle with lemon juice. Dice carrot into 1cm cubes, place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3 minutes.
Cut potatoes into bite-sized pieces, soak in water for 5 minutes, and drain. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 6 minutes.
Mash the warm potatoes and mix in vinegar and salt. Let cool slightly.
Add the seasonings (mayonnaise, wasabi, salt, and pepper) and mix well. Then, add avocado, carrot, and bacon, and mix gently.
