Noodles
- 🍜 2 servings fresh Chinese noodles
Seafood
- 🦪 150g clams (pre-cleaned)
Vegetables
- 🧅 1/2 onion, thinly sliced
- 🧄 1 clove garlic, thinly sliced
- 1/2 chili, sliced
Oil
- 1 tbsp olive oil
Liquid
- 💧 200ml water
- 🍅 400ml unsalted tomato juice
Seasoning
- 🧂 1/4 tsp salt
- Pinch of pepper
Toppings
- 🧀 1 tbsp grated cheese
- 🌿 6 basil leaves
ÉTAPES
Thinly slice the onion and garlic, removing the core of the garlic.
Wash the clams thoroughly and drain excess water.
Heat olive oil, garlic, and chili in a pan over low heat until fragrant. Add onion and sauté over medium heat until softened. Add clams and stir briefly.
Add water and bring to a boil. Cover and simmer over low heat for 5 minutes until clams open. Add tomato juice and salt, then bring to a boil.
Cook the noodles in boiling water according to package instructions. Drain and set aside.
Divide noodles into two bowls. Pour half the soup into each bowl, sprinkle cheese, add pepper, and garnish with basil leaves.
