- 🥓 4 slices bacon
- 200g boiled bamboo shoots
- 🧅 1/2 onion
- 1/2 tbsp olive oil
- 🧂 Pinch of salt and pepper
- 🧀 40g shredded pizza cheese
- 🌿 Pinch of chopped parsley
White Sauce
- 🧈 20g salted butter
- 2 tbsp all-purpose flour
- 🥛 300ml milk
- 1/3 tsp consomme powder
- 🧂 1/3 tsp salt
- 🧂 Pinch of pepper

Cut the bamboo shoots into bite-sized pieces. Slice the onion thinly.
Cut the bacon into 1cm wide strips.
Heat olive oil in a frying pan over medium heat. Add bacon and onion, and sauté until the onion softens. Add bamboo shoots and stir until coated with oil. Season with salt and pepper.
In a microwave-safe bowl, combine butter and flour. Microwave uncovered at 600W for 20 seconds, then mix well.
Gradually add milk to the bowl, whisking each time. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Stir, then add salt, pepper, and consomme. Mix well, cover again, and microwave for another 2 minutes. Stir to finish the white sauce.
Add the sautéed ingredients to the white sauce and mix well.
Divide the mixture into heatproof dishes. Sprinkle shredded cheese evenly on top. Bake in a toaster oven for 10 minutes or until golden brown. Garnish with parsley.
