INGREDIENTI
Meat
- 300g diced pork for curry or stew
Vegetables
- 🧅 1/2 onion, sliced
- 🍄 8 mushrooms, trimmed
- 🥕 1 carrot, chopped
- 🧄 1 clove garlic, minced
Seasoning
- 🧂 Salt and pepper to taste
- Flour for coating
Oil
- 1 tbsp olive oil
Liquids
- 100ml red wine
- 💧 200ml water
Condiments
- 🍬 1/2 tbsp sugar
- 🧂 1/2 tsp salt
- 🍅 100g tomato puree
Garnish
- Cream for finishing
- 🌿 Chopped parsley for garnish
PASSI
Slice the onion, chop the carrot, trim the mushrooms, and mince the garlic.
Season the pork with salt and pepper, then coat with flour.
Heat half the olive oil in a pot over medium heat, sear the pork until browned, then remove.
Add the remaining olive oil, sauté the onion and garlic until softened, then add carrot and mushrooms and cook until coated in oil.
Return the pork to the pot, add red wine, and simmer until the alcohol evaporates. Add water, sugar, salt, and tomato puree, then cover and simmer for 30 minutes.
Serve the dish, drizzle with cream, and sprinkle chopped parsley on top.
