INGREDIENTS
Condiments and Oils
- 2 tablespoons olive oil, divided
- 1 tablespoon drained capers
- ½ teaspoon balsamic vinegar
- ¼ cup prepared pesto
Produce
- 🍅 ¾ cup diced tomato
- 1 pinch red pepper flakes
Dairy
- 🧀 1 (6 ounce) package sliced mozzarella cheese
Bread
- 🍞 4 slices sourdough bread
Seasonings
- 🧂 Sea salt to taste
- Coarsely ground pepper to taste
STEPS
Heat 1 tablespoon olive oil in a nonstick skillet over medium-high heat. Add tomato, capers, and red pepper flakes; sauté until tomatoes just start to break down, about 3 minutes. Remove from the heat and stir in balsamic vinegar.
Brush one side of each bread slice with remaining olive oil. Spread the other sides with pesto. Arrange 2 slices of bread, pesto sides up, on a work surface. Layer with mozzarella cheese, followed by the tomato mixture, then sprinkle with salt and pepper. Top with the remaining bread slices, oiled sides up.
Toast sandwiches in a large skillet over medium heat until golden brown, 5 to 7 minutes per side, using a heavy skillet to weigh them down as they cook.

💡 Use fresh sourdough bread for the best texture and flavor. You can substitute basil pesto with sun-dried tomato pesto for a different twist. If you don't have a heavy skillet to weigh down the sandwiches, use a baking dish with some canned goods as a weight.
