INGREDIENTS
Sauce
- π₯ 1/4 cup mayonnaise
- 1 tablespoon adobo sauce from chipotle peppers
- π 1 teaspoon lime juice
- π§ 1/8 teaspoon salt
Burger Patty
- π 1 pound ground chicken
- π§ 1/2 cup queso fresco
- π§ 1 teaspoon salt
- 1/2 teaspoon ground coriander
Cooking
- π§ 1 tablespoon butter, melted
- 1 tablespoon vegetable oil
Toppings
- πΏ 1/4 cup cilantro
- π§ 4 slices pepper Jack cheese
- π 1/2 cup pico de gallo
STEPS
Mix mayonnaise, adobo sauce, lime juice, and 1/8 teaspoon salt in a small bowl to create the chipotle mayo; set aside.
Combine ground chicken, queso fresco, salt, and ground coriander in a medium bowl. Form into 4 patties and place them on parchment squares. Refrigerate for 10 minutes.
Toast the burger buns: Heat a non-stick skillet over medium-high heat, brush with butter, and toast bun halves, cut side down, for 1-2 minutes. Set buns aside.
Heat vegetable oil in the skillet over medium heat. Cook burger patties for about 3 minutes per side or until the internal temperature reaches at least 165Β°F (74Β°C).
Turn off heat, place cheese slices over the patties, and cover with a lid to melt the cheese using residual heat.
Assemble: Spread chipotle mayo on bottom buns, sprinkle with cilantro, place the patties, and top with pico de gallo. Serve.
