INGREDIENTS
Meringue Base
- 🥚 6 egg whites
- 🧂 ¼ tsp salt
- ¼ tsp cream of tartar
- 1 ½ cups granulated sugar
- 3 tbsp unsweetened cocoa powder
- 2 tsp cornstarch
- 1 tbsp vinegar
- 2 tsp vanilla extract
- 🍫 2 (1 ounce) squares bittersweet chocolate, melted
Toppings
- 🍓 3 cups fresh strawberries, hulled and halved
- 1 ½ cups whipping cream
- 2 tsp granulated sugar
- 🍫 1 (1 ounce) square bittersweet chocolate, melted
STEPS
Preheat oven to 275°F (135°C).
Beat egg whites, salt, and cream of tartar to soft peaks. Gradually beat in sugar until stiff peaks form. Fold in cocoa, cornstarch, vinegar, vanilla, and melted chocolate.
Line a baking sheet with parchment paper and shape meringue into an 8-inch circle. Bake for 1 ½ hours until crispy outside and marshmallow-soft inside. Let cool completely on a wire rack.
Whip cream with sugar, spread over meringue. Decoratively arrange strawberries and drizzle melted chocolate over the top.
