INGREDIENTS

- 4 chicken thighs (bone-in, skin-on)
Marinade
- 🧄 4 cloves garlic
- 🧂 1 teaspoon sea salt
- 1 1/2 teaspoons dried oregano
- 2 1/2 teaspoons paprika
- 1 1/2 teaspoons ground cumin
- 3 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 🧂 2 teaspoons kosher salt (for rubbing on chicken)
STEPS
Make 2 very shallow cuts into the skin of the chicken thigh, perpendicular to the bone. Then flip the thighs and debone them using a knife.
Place the prepped chicken thighs into a resealable plastic bag set in a bowl.
Crush garlic, chili pepper, and sea salt into a coarse paste using a mortar and pestle.
Add lemon zest, oregano, paprika, and cumin to the paste and crush until smooth. Stir in lemon juice, wine vinegar, and olive oil until emulsified.
Pour marinade into the bag with the chicken, add kosher salt, mix thoroughly, remove excess air and seal the bag tightly.
Marinate the chicken in the refrigerator overnight for best results.
Heat a charcoal grill until coals are hot and ashy. Grill the chicken skin-side down over charcoal for 2 minutes. Flip and grill the other side for about 5 minutes.
Flip chicken back to the skin side and continue grilling until skin is browned and internal temperature reaches 165°F (74°C).
Remove the chicken to a serving platter and garnish with fresh lemon wedges.
