- 🍜 360g dried soba noodles

- 🥒 450g grated daikon
- 200g grated nagaimo
- 🌱 6 pieces of okra
- 🧅 Chopped green onion, as needed
Eggs
- 🥚 4 egg yolks

ÉTAPES
Grate the daikon and lightly drain excess water. Grate the nagaimo. Rub okra with salt on a cutting board, rinse, and prepare for cooking.
Boil water in a pot, add okra, and blanch for 30 seconds. Cool, remove stems, and slice into small pieces.
Boil soba noodles according to package instructions. Drain and rinse under cold water to remove starch and cool the noodles.
Plate the soba noodles, top with grated daikon, nagaimo, okra, and egg yolks. Drizzle soba sauce and sprinkle chopped green onions.
