INGREDIENTS
Liquid Base
- 2 ½ cups distilled white vinegar
- 2 cups water
- 🧂 ¼ cup salt
Flavoring
- 🧄 1 clove garlic, peeled
- 6 large sprigs dill
- ¾ teaspoon red pepper flakes (Optional)
Vegetables
- 2 ½ pounds fresh green beans
STEPS
Inspect six 1/2-pint jars for cracks and rings for rust, discard defective ones. Immerse in simmering water and wash lids and rings in warm soapy water.
Stir vinegar, water, and salt in a saucepan, add garlic, and bring to a rolling boil.
Trim green beans to 1/4-inch shorter than the jars.
Remove jars from simmering water. Add dill and red pepper flakes. Pack green beans standing on end.
Ladle boiling brine into the jars within 1/4-inch from the top and seal jars with lids and rings.
Place a rack in a stockpot, add water, boil, and lower jars 2 inches apart into the boiling water. Cover jars with 1 inch of boiling water and simmer, process for 10 minutes.
Remove jars and cool at room temperature for 8-12 hours. Test seals by pressing on lids — they should not move.
Let green beans ferment for 2-3 weeks in a cool, dark space before eating.
