INGREDIENTI
Pork
- 300g thinly sliced pork loin
Vegetables
- 🍆 2 medium eggplants (160g)
Seasoning
- 🧂 A pinch of salt and pepper
- Potato starch as needed
Oil
- Cooking oil as needed
Garnish
- 🧅 Chopped green onion as needed
Soy Sauce Glaze
- 🍬 1/2 tsp sugar
- 🧂 1 1/2 tbsp soy sauce
- 1/2 tsp grated ginger
- 1/3 tsp chicken broth powder
- 💧 200ml water
- 1 tbsp potato starch
PASSI
Cut off the stems of the eggplants and slice them into small bite-sized pieces using a diagonal cutting technique.
Season the pork slices with salt and pepper, wrap them around the eggplant pieces, press gently to secure, and coat with potato starch.
Heat about 2cm of cooking oil in a frying pan to 180°C. Fry the wrapped eggplants for about 3 minutes, turning occasionally, until the pork is cooked through.
In a microwave-safe bowl, mix all the soy sauce glaze ingredients. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Stir, then microwave uncovered for another 2 minutes.
Plate the fried eggplants, pour the soy sauce glaze over them, and garnish with chopped green onions.
