    • 6 dried shiitake mushrooms

    • 1 tbsp sake
    • 2 tbsp mirin
    • 🍬 1/2 tsp sugar
    • 1 tbsp soy sauce
    • 200cc shiitake soaking liquid

Soak dried shiitake mushrooms in water for 15 minutes. Squeeze lightly to remove excess liquid and reserve 200cc of the soaking liquid. Trim the stems and separate the caps and stems.

Soak koya tofu in hot water according to package instructions. Squeeze out excess water and cut into bite-sized pieces.

In a microwave-safe container, mix all seasonings (☆). Add shiitake mushrooms and koya tofu, ensuring they are fully submerged. Cover loosely with plastic wrap and microwave at 600W for 4 minutes. Let cool slightly with the wrap still on.
