INGREDIENTI
Fish
- 🐟 2 fillets of flounder (120g)
Vegetables
- 🥬 4 asparagus spears
- 🧄 1 clove garlic, thinly sliced
- 🍅 Cherry tomatoes, as needed
- 🌿 Chopped parsley, a pinch
- 🍋 Thinly sliced lemon, as needed
Seasonings
- 🧂 Salt and pepper, a pinch
Flour
- Flour, as needed
Oils and Fats
- 1 tbsp olive oil
- 🧈 10g salted butter
Liquids
- 2 tbsp white wine
Lemon Butter Sauce
- 🧈 10g salted butter
- 🍋 1 tbsp lemon juice
- 1 tsp soy sauce
PASSI
Pat the flounder fillets dry with paper towels. Season with salt and pepper, coat both sides with flour, and shake off any excess.
Peel the lower half of the asparagus spears and cut them into 5cm pieces.
Heat olive oil and sliced garlic in a frying pan over low heat until fragrant. Add the flounder fillets and 10g of butter. Add the asparagus to the pan and cook both until golden brown over medium heat.
Flip the flounder fillets, add white wine, cover with a lid, and steam over low heat for 2–3 minutes until cooked through.
Wipe the pan clean with a paper towel. Add the ingredients for the lemon butter sauce (butter, lemon juice, soy sauce) and heat over medium heat until the butter melts and the sauce comes to a boil.
Plate the flounder with asparagus and cherry tomatoes. Drizzle the lemon butter sauce over the fish, sprinkle with parsley, and garnish with lemon slices.
