- 🍗 3 chicken tenderloins

- 🍆 2 eggplants
- 🍅 8 cherry tomatoes

Sauce
- 🧄 1/2 tsp grated garlic
- 1 tbsp miso
- 1 tbsp sake
- 1 tbsp mirin
- 1 tsp soy sauce
PASOS
Remove the tendons from the chicken tenderloins and cut them diagonally into bite-sized pieces. Season with salt and pepper, then coat evenly with flour.
Cut the eggplants into bite-sized pieces by rotating and slicing diagonally.
Mix the sauce ingredients (miso, garlic, sake, mirin, soy sauce) in a bowl.
Heat salad oil in a frying pan and stir-fry the eggplants over medium heat until softened. Add the chicken and cook until fully done.
Add the sauce and cherry tomatoes to the pan, then stir-fry until the liquid evaporates.
