INGREDIENTS
Wet Ingredients
- 🧈 1/4 cup unsalted butter
- 🍁 1/2 cup maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients
- 🌰 1/2 teaspoon ground cinnamon
- 🧂 1/4 teaspoon salt
- 🌰 1/4 teaspoon ground nutmeg
- 🥣 2 cups old fashioned oats
- 🌰 1/2 cup sliced almonds
- 🥥 1/2 cup flaked coconut
- 2 tablespoons flax meal
Toppings
- 🥛 1 cup plain whole milk Greek yogurt, or as needed
- 🍓 1 cup fresh berries
STEPS
Place butter and maple syrup in a large bowl and microwave in 30-second intervals, stirring each time, until butter is melted (about 1 to 1.5 minutes). Add vanilla, cinnamon, salt, and nutmeg. Stir to combine.
Mix in oats, almonds, coconut, and flax meal. Stir until fully combined.
Generously grease a muffin tin with nonstick baking spray. Fill each cup with about 2 heaped tablespoons of the mixture. Press the mixture into the bottom and sides to form a cup shape. Refrigerate for 15 minutes.
Preheat the oven to 350°F (175°C).
Bake chilled granola cups in the preheated oven for 25-30 minutes until edges are golden brown. Cool to room temperature in the pan for 30 minutes.
Use an offset spatula or butter knife to carefully remove cups from the muffin tin. Fill each granola cup with yogurt and top with berries before serving.
