INGREDIENTS

- 1 (14-ounce) package extra-firm tofu, drained
- π₯ 1/4 cup Greek yogurt
- π₯₯ 1/4 cup canned coconut milk
- 2 tablespoons vegetable oil
- π― 1 tablespoon honey
- π§ 3 cloves garlic, minced
- 2 teaspoons freshly grated ginger
- 4 teaspoons curry powder
- π§ 1/2 teaspoon salt
STEPS
Cut tofu into 8 (1/2-inch thick) rectangles. Wrap between paper towels and weight down with a heavy pan for about 30 minutes to remove excess liquid.
In a small bowl, whisk together yogurt, coconut milk, oil, serrano pepper, honey, garlic, ginger, curry powder, and salt to make the marinade.
Transfer marinade and tofu to a resealable bag. Seal and refrigerate for 30 minutes to 24 hours.
Preheat an outdoor grill to low heat (225-250Β°F). Generously oil grill grates four times to prevent sticking.
Remove tofu from marinade, letting excess liquid drip off. Reserve marinade for brushing. Thread tofu lengthwise onto skewers.
Grill tofu kebabs, covered, for 20 minutes, turning halfway through. Brush with reserved marinade in the final 3 minutes. Serve with chutney for dipping.
