INGREDIENTS
Pasta Dough
- 2 cups all-purpose flour or "OO" flour
- 🥚 3 large eggs
Cheese Filling
- 12 ounces ricotta cheese
- 1 ounce Parmesan cheese, grated
- 🥚 1 large egg yolk
- 1/4 cup Italian parsley
- 🧂 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 pinch cayenne pepper
Assembly
- 3 cups marinara sauce
- 4 ounces mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
STEPS
Make a pile of flour on a work surface and make a well in the center. Add eggs to the well and scramble with a fork, gradually incorporating flour until a shaggy dough forms.
Knead dough by hand until smooth. Cover and rest for 10–15 minutes. Knead again until very elastic, about 4 minutes. Divide dough for use and refrigerate one piece for 2 hours.
Mix ricotta, Parmesan, egg yolk, parsley, salt, black pepper, and cayenne in a bowl for filling. Refrigerate until needed.
Preheat oven to 450°F (230°C).
Roll out pasta dough into very thin sheets. Divide into four pieces.
Boil pasta sheets for 1 minute 30 seconds. Cool in cold water, then arrange on a work surface.
Spread cheese mixture and sauce evenly over pasta sheets. Add basil and mozzarella, then fold sheets to form handkerchiefs.
Layer handkerchiefs, alternating with sauce, reserved cheese mixture, and mozzarella. Top with Parmesan and drizzle olive oil.
Bake in the preheated oven until golden brown and bubbling, for 25–30 minutes. Let rest before serving.
