INGRÉDIENTS
Meat
- 🐖 150g pork loin shabu-shabu slices
Vegetables
- 🥬 1/2 head lettuce (200g)
- 🍄 1 pack shimeji mushrooms (100g)
- 🧅 1/2 stalk green onion (80g)
Condiments
- Ponzu soy sauce, as needed
Broth
- 💧 600cc water
- 10cm dried kombu
ÉTAPES
Wipe the surface of the dried kombu lightly with a damp kitchen paper towel. Place kombu and water in a pot and let it sit for 1 hour.
Tear the lettuce into large pieces by hand. Trim the root of the shimeji mushrooms and separate them by hand. Slice the green onion diagonally into 1cm-wide pieces.
Heat the pot with kombu and water over low heat. Just before boiling, remove the kombu. Add shimeji mushrooms and green onion, then heat over medium heat until boiling. Simmer for 2–3 minutes to create the broth.
Dip pork slices and lettuce leaves into the broth one at a time to cook them.
Serve with ponzu soy sauce for dipping.
