    • 1 large hanpen (120g)
    • 100g firm tofu
    • 1 lotus root (150g)
  • Coating

    • 1 tbsp potato starch
    • 3 tbsp salad oil
  • Seasoning

    • 1/2 tsp aonori
    • 2 tbsp potato starch
    • 🧂 1/3 tsp salt
    • A pinch of pepper

Cut the lotus root lengthwise into 12 thin slices. Soak in water, then pat dry with kitchen paper.

Place firm tofu on a heatproof plate lined with kitchen paper. Microwave at 600W for 1 minute to remove excess water, then let it cool.

Place hanpen and the cooled tofu into a plastic bag. Knead until smooth. Add the seasoning ingredients (☆) and knead again to create a fluffy filling.

Coat both sides of the lotus root slices with potato starch. Place the fluffy filling on half of the slices, then sandwich with the remaining slices. Press lightly.

Heat salad oil in a frying pan over medium heat. Fry the sandwiches until golden brown on both sides. Drain excess oil and serve.
