INGREDIENTS
Sauce
- ½ cup orange juice
- 2 tablespoons tomato paste
- ¼ cup coconut aminos
- 1 tablespoon chile-garlic sauce
- 2 tablespoons rice vinegar
- 1 teaspoon ground ginger
- 1 teaspoon granulated garlic
- 2 teaspoons arrowroot powder
Chicken
- 2 ½ pounds skinless, boneless chicken breasts
- 🧂 1 teaspoon salt
- ½ teaspoon ground white pepper
- 1 tablespoon arrowroot powder
Vegetables
- 🧅 ½ medium onion, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 2 cups broccoli florets
- ½ teaspoon red pepper flakes
- 2 cups chopped fresh mango
Cooking Oil
- 2 tablespoons avocado oil, divided
STEPS
Combine orange juice, tomato paste, coconut aminos, chile-garlic sauce, rice vinegar, ginger, garlic, and arrowroot powder in a container. Shake until well combined; set aside.
Cut chicken into bite-size pieces. Season in a plastic bag with salt, white pepper, and arrowroot powder.
Heat half the avocado oil over medium-high heat. Cook chicken pieces until browned and juices run clear, about 10 minutes.
Heat remaining oil, then stir-fry onion, bell peppers, broccoli, and red pepper flakes until crisp but brightly colored.
Add mango and pour in sauce, stirring constantly until it thickens. Return chicken to pan.
Turn off the heat and allow residual heat to cook vegetables until crisp-tender.
