- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon Aleppo chili flakes
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground turmeric
Fresh Ingredients
- 1/4 cup chopped fresh parsley
- 1/4 cup fresh cilantro
- 🧅 1 large yellow onion
- 1 cup green olives

- 1/2 cup chicken broth or water
- 2 tablespoons olive oil

STEPS
Combine saffron threads with boiling hot chicken broth or water in a small bowl; steep until cooled to room temperature.
Cut preserved lemon into quarters and finely chop the flesh; slice peel into strips.
Prepare chicken by making cuts on thighs; marinate with preserved lemon flesh, garlic, spices, and saffron liquid for 3-12 hours.
Brown chicken in olive oil, then remove.
Cook onions with salt, cinnamon, and turmeric; add chicken back to the pan.
Simmer chicken for 1 hour on low heat.
Add olives and lemon peel, baste chicken, and cook until tender.
Raise heat and reduce liquid to desired consistency; garnish with parsley and cilantro.
