    • 🍋 2 tablespoons lemon juice
    • 1 tablespoon onion powder
    • 1 tablespoon garlic powder
    • Kosher salt and ground black pepper to taste

Mix brown sugar, chili powder, garlic powder, paprika, black pepper, onion powder, salt, cumin, cinnamon, jalapeño seasoning, and cayenne pepper together in a small bowl to make the spice rub.

Rub the seasoning mixture generously over the spareribs and place them in a glass baking dish. Cover and refrigerate for at least 4 hours or overnight.

Preheat a charcoal grill to 250°F (120°C) using indirect heat or set up a smoker.

Cook the ribs for 3 1/2 to 4 hours. Every hour, baste the ribs with mop sauce and add more soaked wood chips to the coals. Add more charcoal as needed to maintain a temperature of at least 225°F (110°C). Discard any leftover mop sauce after cooking.
